Ingredients
- 2 tablespoons extra virgin olive oil
- ½ cup canned corn, drained or frozen, defrosted
- Salt
- Red pepper flakes
- ½ cup canned black beans, rinsed and drained
- 1 cup canned tomatoes
- ¾ cup cooked rice (white or brown rice)
Directions
Heat the olive oil in a medium pan on medium-low. Add the corn. Season with
salt and red pepper flakes.
Cook 6 to 8 minutes. Add the black beans.
Cook 5 minutes. Add the tomatoes and cook for 5 minutes to blend the flavors.
Add the cookedrice and cook 4 to 5 minutes or until the rice is heated.
